Chef Ogawa travelled all over Italy during his training, from north to south, and what made the strongest impression on him was the winter cuisine of northern Italy.
The stews and grain dishes that have been cultivated in a region surrounded by lakes and mountains are imbued with the wisdom of living in harmony with the seasons.
The climate of Zushi, where the sea and mountains are close by and the presence of nature is felt all around, overlaps with the way of life in Northern Italy, where food is deeply rooted as an extension of life.
Based on those memories and sensations, we have prepared a course menu of Northern Italian cuisine that you will want to enjoy at this time of year.
The wines are selected for each dish by Riviera's sommelier.

Keisuke Ogawa

Main Chef at Ristorante AO Zushi Marina

Chef Ogawa, who trained at Michelin-starred restaurants across Italy, has used his experience in Japanese cuisine to create new menus for each season based on the concept of seasonal cuisine, providing a sophisticated space and cuisine suitable for everyday meals as well as anniversaries. In 2017, he became chef at Ristorante AO Aoyama, and has continued to create dishes that satisfy the many gourmet customers in Tokyo, and in 2019 he was appointed main chef at Ristorante AO Zushi Marina.
